Recipe Urban Legends (Facebook Edition) ~Crack Potatoes~

For those of you on Facebook, I am sure you have seen a few of these "reposts" sneak through your feed from time to time...  I call them Recipe Urban Legends, because they are usually posted with such a sense of urgency, while shrouded in awe and mystery:

Of course, I have yet to see a vegan one.  Maybe they exist.  Who knows? For the most part these recipes are something along the lines of: bacon, ranch, crescent roll, buffalo, biscuit, cheesy, chicken, 1-dish crockpot, casserole. Most of the time, I think to myself, EW who on EARTH would eat this, or better yet, make it for family or guests?  But then sometimes I think, "well, if you swap out a couple things... this could make one fine vegan dish..."

So, for those of you who do not know, I am in my most busiest time at work: University back-to-school.  Think: 12 hour days, six days a week, some pretty intense overtime pay, and hardly a moment to put together a decent, healthy meal.  And, then there is Vegan mofo on top of all that...  

So, as I gazed at 6 lonely potatoes sitting in a bowl on my counter, as well as a lovely sample of Wayfare whole grain bacon-y bits from Vida Vegan Con:

a recipe "urban legend" that passed through my Facebook feed earlier that day came to mind:  

CRACK POTATOES.  The name says it all... or does it?

Either way, I had everything on hand, including leftover vegan ranch dressing that I made up from Joni's mix in Vegan Food Gifts (great book, I tested recipes for it ~ check it out)!


Crack Potatoes - Vegan Style!

*Now, this recipe has been shared up, down, and all over Facebook, but, to give credit where credit is due, the original post and recipe I used is here.  (Apparently, there is a Crack Dip, too...)


Ingredients
3 lb potatoes, washed and cubed
4 Tbsp, butter Earth Balance (I used half this and it was STILL too much. 1T at the most)
1/4 c. Real Bacon Bits Wayfare Vegan Bacon-y Bits
1/4 c. ranch dressing
1/2 c. cheese Daiya Cheddar shreds

Instructions
1. Put potatoes in an 8x8 in glass dish. Put butter on top of potatoes. Add salt and pepper to taste. Sprinkle bacon bit on top. Cover with aluminum foil and bake at 400 degrees for 1 hour.
2. Take potatoes out of oven and top with ranch dressing and cheese. Stir. Put back in oven until cheese is melted.

Ya know, these weren't half-bad. Not quite the level of "crack" I was expecting, but not too shabby either. I would definitely cut the Earth Balance way back next time, and maybe sprinkle the potatoes with the dried ranch seasoning mix instead. My vegan ranch separated from the heat of the oven before the cheese was melted.

Simple Oven Roasted Potatoes

Today's recipe inspiration comes from one of the biggest Food Network MOFOs of them all, Tyler Florence.
I'm kidding... but seriously...
I happened to find his simple, no-fuss recipe for home made oven fries through a random internet search.  They were such a big hit in our house (and by big hit, I mean the two of us ate the entire sheet), that I find I use this basic recipe formula pretty much every time I roast potatoes.

Simple Oven Fries

Ingredients
  • 2 large russet potatoes, scrubbed and unpeeled, cut in 1/2 lengthwise, and then cut into fourths to make 16 big, fat wedges
  • 1-2 tbsp extra virgin olive oil
  • 1 tsp Kosher salt, and pepper to taste
  • 1-2 tablespoons chopped parsley leaves, fresh or dried (I’ve used both)
  • 1/4 cup Nutritional yeast flakes
Directions
Preheat the oven to 425 degrees.
Preheat a baking sheet in the hot oven for at least 15 minutes.
While the baking sheet is heating, toss the potatoes with the olive oil and 1 teaspoon salt in a large bowl. 
Then dump the potatoes out onto a baking sheet, spreading to a single layer. 
Roast for 30 to 35 minutes, shaking the pan every now and then, until the potatoes are cooked through, brown and crispy. 
Toss the fries in a big bowl and sprinkle with parsley and nutritional yeast.

I didn't have to change much from the original recipe; I just substituted Nutritional Yeast for the parmesan.  What is so great about this recipe is that it can be easily doubled, and, depending on your mood, you can and add any additional spices or seasonings you prefer.  For example, the batch above, I cut the potatoes into large cubes instead of fries, added some onion and garlic powder, and seasoned salt.

Some other nice additions might be:
paprika (sweet or smoked)
rosemary and sea salt
garlic and crushed red pepper
cumin and coriander
herbs de provence
or, our favorite, OLD BAY!

One secret I do have is that I cook these on a pre-heated stone baking sheet that I got from Pampered Chef a while back.  Their stoneware heats up so nice, and really gives a nice brown crust to anything you might be roasting, especially potatoes.

Recipe Testing: Crispy Eggplant and Garlicky Potato Dip (Skordalia)

Another winning recipe test for Terry Hope Romero's  new cookbook that I wanted to share!


I think I may be conquering my eggplant phobia once and for alI; I absolutely loved this recipe! The breading was delicious, plain panko perfectly seasoned with oregano, rosemary and thyme.  The "glue" to hold on the crumbs is not a runny, raw egg, but rather vegan mayonnaise. I used a pastry brush to coat the slices with the mayo, because it was a little thick.  Overall, I thought this technique worked nicely


Now, for the garlic lovers...
I present to you: Skordalia - Garlicky, Greek Goodness!
Garlicky Potato Dip (Skordalia)



I was first introduced to this garlicky dip at L's uncle's house, attending their annual Greek family reunion Summer picnic. As I turned my head away from the whole lamb roasting on spit on the front yard, I was politely escorted over to a table where a small dish of creamy white something sat. "THIS", they proudly proclaimed, "is vegetarian!  And if you like garlic, you will LOVE it"!  Well, it was garlic-y, all right!!  I proceeded to eat the dip with cucumber slices and kalamata olives for the rest of the afternoon... I later found out that L's uncle makes his skodalia with egg yolks. *sad face* (BUT, I was vegetarian when I first tried it, so Vegan Police, stay away) So, needless to say, I was beyond excited when I saw Terry's vegan version on her recipe testing list!


My review:  
LOVED, directions were perfect. Served with Crispy Eggplant (photo above), I actually had no zucchini on hand and Terry's original recipe was crispy eggplant and zucchini. I loved the amount of garlic, and actually used an extra clove because mine were small. Skorda is garlic in Greek, so go big or go home.

Definitely will make again, probably for special occasions or a weekend, or a Greek-themed dinner. We might make little Napoleons with the Crispy Eggplant/Zucchini next time as an appetizer for a party, as suggested by my better-half ^_^

Brunchin' It: Potato & Chorizo Home Fries & Tofu Scramble

After working six days in a row, having this weekend off is like a little slice of paradise! What better way to start off a lazy day, than a super huge, yummy breakfast:

Scrambled Tofu with Home Made Salsa

Scrambled tofu is on the breakfast menu quite a bit in our house.  I usually use this Basic Scrambled Tofu recipe as a base, and then flavor accordingly, depending on my mood.    I've listed measurements for the spices below, but in all reality, I do the spices and seasonings "to taste".

  • Basic Breakfast Tofu Scramble
  • 1 (16 ounce) package firm tofu
  • cooking spray
  • teaspoon onion powder
  • tablespoon Dijon or yellow mustard
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt
  • fresh ground white pepper
  • 1-2 tablespoons nutritional yeast
  • tablespoon soy creamer , plain, unsweetened (can use almond or soy milk too)  
  • **The cream or milk adds a nice smooth finish, and allows the spices to coat the tofu evenly.  Especially the turmeric, which gives the scramble a nice, even yellow color
    • Spray non-stick frying generously with cooking spray, and heat over medium.
    • Drain the package of tofu and crumble into the pan. Cook for 3-4 mins, until tofu begins to release some of its water.
    • Add the remaining ingredients (except the creamer) and mix well to combine evenly.
    • Cook for another 10 minutes or so, stirring regularly.
    • When tofu releases most of its water, and begins to firm up, add creamer and mix well.
    • Cook another 1-2 minutes, allowing some of the liquid to evaporate, then remove from heat.
    • Serve with toast
    Most of the time I'll leave the scramble plain, but this week, I had some yummy chorizo sausages from Viva Vegan (chipotle version!) on hand.  I knew I was going to mix the diced chorizo with some potato and onion, so I went with a bit of Mexican spice in the scramble this time.  

    So, we have: Tofu Scramble base, plus some cumin, coriander, a bit more nutritional yeast, and a half cup of Kathy's home made fresh salsa (diced tomato, red, yellow and orange pepper, jalapeño and half of a habnero, red onion and lime)!

    And now for the potatoes!

    I got some refined coconut oil, and was interested in trying it out.  I saw the gals on Spork Fed Foods making home fried sweet and white potatoes fried on coconut oil.  I usually use olive oil myself, but I thought this might be a nice change.  I put a bit of the coconut oil in my cast iron pan, and fried up my chorizo pieces until they were crispy, then set aside. I added another couple of tsps back to the hot pan, and tossed in about 5 red potatoes, scrubbed and diced, with their skin on and one.  Then I seasoned to taste:  italian seasoning, a bit of garlic powder, a bit more of onion powder, some cumin and coriander, cajun seasoning and paprika.  Toss potatoes with then salt and pepper to taste. 

    Needless to say we were full.  And, skipped lunch... ^_^

    Lemon Rosemary Roasted Potatoes

    I had these beautiful stalks of fresh rosemary left over from New Years Eve, and half a bag of potatoes, so I threw together this:

    Lemon Rosemary Roasted Potatoes

    Lemon Rosemary Roasted Potatoes
    1 lb potatoes, peeled and cubed (this time I used organic russet)
    Zest of 1 lemon, removed in wide strips with a vegetable peeler
    2 tbsp Olive Oil
    1 large sprig of fresh rosemary, chopped
    1/2 tsp sea salt, or to taste
    freshly ground black, pepper, to taste

    Preheat oven to 475.  I use my Pampered Chef large stone bar pan, and preheat the pan right in the oven.  The preheated stone cookies with a nice even heat, and gives whatever you roast on it, a gorgeous brown, caramelized color!

    While the oven heats up, place the olive oil and lemon zest strips in a microwave safe dish, and gently warm 30 seconds at a time, until fragrant.  I think I did mine for a total of 1:30.  (You can also do this in a small pot on the stove over low)

    Add chopped rosemary and let sit in the warm oil for 10 minutes.

    Toss cubed potatoes with the flavored oil on the preheated bar pan, spread evenly,  and add salt and pepper to taste.

    Great side dish for chickpea cutlets!!

    Roast in oven for 10- 15 minutes, flip potatoes, and roast an additional 5-10 minutes, or until tender
