Wacky Cake with Chocolate Glaze

*Today, I am dusting off this recipe because it is my friend's bridal shower! Mailed out with the invitation was a recipe card to fill out with a (family) recipe to share. Of course, I wanted my recipe to be vegan, but I DID want it to be one she would actually consider making.  This is the one I shared:


I think almost every vegan has a Wacky Cake recipe up their sleeve. For those of you that don't know, WACKY CAKE is "wacky" because it's a chocolate cake, made without any milk or eggs. Recipes such as this one came to be during the Great Depression, where ingredients such as milk and eggs were extremely had to come by, and often too expensive for the average family. The "lift" in this cake comes from the reaction between the baking soda and vinegar. 

I found this recipe buried in a random website, labeled as the BEST CHOCOLATE CAKE EVER" and it just so happens to be vegan. The chocolate glaze totally makes this recipe, so do yourself a favor and try it at least once. Cake IS still amazing in its own, dusted with some powdered sugar. I added in the "optional" extracts that I use when making the cake too. They really add a great flavor.

THE Best Wacky Cake with Chocolate Glaze

INGREDIENTS
1 1/4 cups flour
1 cup sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup warm water
1 teaspoon vanilla extract
1/2 teaspoon chocolate extract (optional)
1/3 cup canola oil
1 teaspoon white vinegar or 1 teaspoon apple cider vinegar

For the Chocolate Glaze
1/2 cup sugar
4 tablespoons margarine (I use Earth Balance vegan margarine)
2 tablespoons soymilk or 2 tablespoons almond milk, unsweetened
2 tablespoons unsweetened cocoa powder
2 teaspoons vanilla extract
1/2 teaspoon almond extract (optional)

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. Lightly spray a square cake pan (mine's 9x9) with nonstick cooking spray.
  3. In a mixing bowl, mix together flour, sugar, cocoa, baking soda, and salt with a whisk, making sure it is blended together well.
  4. In a large measuring cup add the water, vanilla, oil, and vinegar, and whisk to combine.
  5. Add wet ingredients to the dry and mix batter until blended together well.
  6. Use a spatula to scrape down the sides if necessary.
  7. Pour batter into cake pan, place in oven and bake for about 25-30 minutes, or until a knife comes out clean.
  8. Cool on a rack completely.
  9. For the glaze: in a small saucepan, bring sugar, margarine, milk, and cocoa to a boil.
  10. Stir frequently; then reduce heat to a simmer for 2 minutes, stirring constantly.
  11. Remove from heat and stir for another 5 minutes.
  12. Add vanilla and almond, if using, stir, and immediately pour onto cake.
  13. The glaze will begin to dry really quickly, so if it doesn't cover the whole cake (mine usually does) spread the glaze to the edges quickly, before it dries.
  14. If you like, top with sprinkles, and let cool for a hour.

Mango Fruit Salsa

Fruit Salsa - Mango, Strawberry, Kiwi

Last month, I attended my friend Jess' Pampered Chef Party!  Usually, I am not one for "overly-specific" kitchen gadgets, but any party that involves food, and is centered all around cooking is fine by me!
(In all fairness, I do have quite a few Pampered Chef items, and I use them ALL the time; Some, almost every day).

I had so much fun at Jess' party, that I decided to have one of my own: VEGAN style!  My Pampered chef consultant was rather excited to do an all vegan version of her Pampered Chef demo, especially since she had never done anything like that before.  We decided on two recipes:  Mango Fruit Salsa, to highlight the new Manual Food Processor, and Mediterranean Hummus Flat bread Pizza - no cheese needed!
This salsa recipe is so simple to prepare,  and tastes wonderful. I even made this for two cookouts this Fourth of July, and it was a huge both times.


Don't worry if you don't have the Pampered Chef manual food processor. I find that I can dice the fruit with my knife just fine, and it even comes out a little neater looking; The manual food processor just saves time. Please feel free to use lemon OR lime, for juice and zest. I've used both, and they both work well. Depending on the sweetness of the fruit, I add agave nectar to taste, no more than 1 tbsp usually. Serve with Stacey's Cinnamon Sugar pita chips, or your own home made pita chips. This is also amazing served over ice cream! I believe 1/2 cup salsa = 2 Weight Watchers Points



RECIPE:

1 cup strawberry, hulled and diced
1 kiwi, peeled and diced
1 mango, ripe
1 teaspoon lime zest
1 tablespoon lime juice
agave nectar, to taste

DIRECTIONS:

1. If not using the Pampered Chef Manual Food Processor, try and chop your fruit into uniform 1/4 - 1/2" cubes.
2. For the mango, I usually peel the skin off first with my vegetable peeler, and chop a small slice off the top and bottom. That way it stays flat on my board as I slice around the pit.
3. The pit of the mango is large and flat. When you slice off a bit of the top and bottom, you can see its shape. I usually cut down the two wide sides of the mango first, and then carefully slice down the thinner sides to make sure I get all of the beautiful yellow mango off the pit.
4. Ripe mango is very slippery, so carefully slice fruit and dice into cubes.
5. Add all fruit to a large bowl.
6. Add lime (or lemon) zest and juice.
7. Taste, and add agave nectar, up to 1 tablespoons.
8. Serve with cinnamon pita chips.

My gift for hosting a show was this awesome Cool 'N Serve Tray, that has two green panels that you can put in the freezer. When you take your yummy salsa to a cookout in the sun, your fruits and veggies stay nice and cool ^_^

Quick Vegan Pasta Alla Vodka

Pasta and red sauce can be a quick and easy weeknight meal, but why not try something a bit more interesting.

This version of vegan vodka sauce is so simple to throw together, and lends itself to MANY spice variations, or veggie add-ins!

Pasta alla Vodka - Vegan style
16 ounces whole wheat pasta (I used rotini)

24 ounces tomato sauce
12 1/2 ounces silken tofu
2 ounces almond or soymilk
2 tablespoons nutritional yeast
2 ounces vodka or red wine vinegar
salt and pepper, to taste
 
*If you are using plain tomato puree instead of a sauce, I suggest adding some garlic or garlic powder, Italian seasoning, and a few hits of crushed red pepper.
 
1.  Prepare pasta according to package directions.

2.  Meanwhile, heat tomato sauce in a saucepan over low to low-medium heat.

3.  Blend tofu, soy milk, and nutritional yeast in blender until smooth. Feel free to also add about a tablespoon of olive oil or additional soy milk, until the consistency is like thick alfredo sauce.

4. Add tofu mixture to the saucepan with the marinara sauce. Stir in vodka or vinegar. Add salt and pepper and any other seasonings you like, to taste. Continue to simmer over low heat until pasta is ready.

5. Toss with drained pasta and enjoy!
